A Twist on a Classic

For years ensaymada has been a classic merienda snack. It’s cheap, deliciously simple, and perfect for eating on the go. We’ve grown up with the traditional recipe, but in our modern gastronomic era local chefs are putting a twist on the things we call nostalgic.

I present to you the craquelin ensaymada- a French-inspired version of the popular snack. The beauty of its invention is that it doesn’t take away from the authenticity of the bread, it only elevates it. Craquelin is a crunchy top layer that is commonly baked with choux pastry, giving an extremely pleasant texture. The usual soft ensaymada now has a surprising balance.

The creators of the upscale treat are the owners of “Shammah Baked Goods” a small business that specializes in breads and pastries. Upon recently starting deliveries, many of their followers are raving about their ube craquelin ensaymada. And it’s no wonder why- the gorgeous dark purple crust contrasting over the pillowy bread is perfect for posting on social media.

The real question is, how does it taste? I was able to try their popular ube flavor- and all I can say is “wow, that’s delicious.” The craquelin is the first textural component that comes into play. It gives such a great subtle crunch and just the perfect hint of purple yam. The craquelin gives off a nice balance to a soft ensaymada bun with a creamy ube filling. The shocking thing is that the bread isn’t heavy at all! It’s the perfect merienda snack.
The ensaymada recipe is the textbook example of bread done well. It speaks for itself. Most ensaymadas you buy from corner stores present as hard or chewy. Their recipe is buttery, fluffy, with just with the right amount of sweetness. The owners, hailing from Cebu City, trained in culinary school for many years. I highly recommend everyone to see the difference in their product.
