Esther's Special Mango Pandan

The sweetness of sticky condensed milk. A richness from the table cream. The delightful texture from the agar-agar. All balanced with the tartness from fresh mango.
This is our mango pandan family recipe.
The story behind this is one nineteen years in the making. My mom had received this dessert recipe from a friend of hers and made it for my first birthday. Incredibly surprised how delicious this four-ingredient masterpiece came to be- the mango pandan continued to pop up during all sorts of events.
Ever since then, it's been a family staple. Birthdays, get-togethers, and parties - it's very likely that mango pandan will be served at our household.
My little sister Esther came from school today, proudly declaring, "I'm making mango pandan!"I decided to take a few pictures of her and document her venture of making this delicious dessert.

Fun fact about my sister: she's an amazing (aspiring) pastry chef. I don't know any other twelve-year old who can make perfect pat a choux or cream cheese frosting with ease.
Anyways, just thought I would gush about her here, you're welcome, child.
KANGLEON FAMILY MANGO PANDAN
INGREDIENTS
1 can of condensed milk
1 can of table cream
1 stick of agar agar or 1 packet of gelatin
3 ripe mangoes
Step 1: Incorporate condensed milk and table cream in a bowl, mix till fully blended.



Step 2: Set mixture aside. If you are using agar-agar start soaking the stick in water (make sure it is fully immersed for 30 minuets)
-If using gelatin, follow instructions on the packet

Step 3: While the agar-agar is soaking, start slicing the mangoes.
Make sure to cut the fruit into small-bite sized cubes ( visual instructions below)




Step 4: Add the mangoes into the condensed milk/table cream mixture
(Start cooking your agar-agar at this point- follow the package instructions!)

Step 5: After cooking the agar-agar set aside to firm in a square pan, set mixture in the fridge.
Step 6: When agar-agar has firmed cut into small cubes (similar to the size of the mangoes)

Step 7: Incorporate agar-agar into your mixture, and fold lightly.


Step 8: Chill in fridge for a few hours. Serve in a bowl and enjoy!
